The 'Kuku Safe' project team, operating under the Food Safety Lab led by Prof. Catherine Kunyanga, recently paid a courtesy call to the Dean’s Office at the Faculty of Agriculture, University of Nairobi.
The team is currently conducting research activities at Burma Market, where they are collecting poultry and environmental samples. These samples will be analyzed for antimicrobial-resistant (AMR) pathogens as part of a broader food safety initiative.
This work falls under the research project titled “Wet Markets as 'Amplifiers' of Antimicrobial-Resistant Pathogens in Nairobi, Kenya: Building the Evidence Base for Targeted Interventions to Protect Human Health.”
The project is a collaborative research study between the University of Nairobi and the Rollins School of Public Health, Emory University, USA. It aims to generate critical evidence to inform targeted interventions that can mitigate the spread of AMR pathogens, particularly in informal wet market environments.
The Dean welcomed the team and commended the initiative for its timely focus on food safety and public health, especially in the context of antimicrobial resistance—a growing global concern
