Strengthening African Processors to Reduce Food Losses and Waste (SAP) was one of the exhibitors at the just concluded Nairobi Innovation Week 2022 (NIW 2022) which was held between 26th to 28th April 2022 at the Main Campus, University of Nairobi.
Under the banner ‘Innovative Products from Mango Fruit Processing and Waste Valorization’, the project team showcased innovative products that can processed from mango fruit and mango processing waste. Apart from the products that have been showcased in other forums such as mango pulp, mango juice (nectar), mango jam, mango chutney, mango-enriched yoghurt, mango wine, mango chips and mango leathers (rolls), four new products were showcased at the NIW 2022. The new products which have been developed separately by graduate students included:
- Mango-moringa nectar (by Mbusa Sikwaya, MSc Food Science)
- Mango flakes (by Ali Jumbale, MSc Food Science)
- Layer chicken feed/diet enriched with mango peel (by Everlyn Nawiri)
- Broiler chicken feed/diet enriched with mango seed kernel (by Naum Jepkirui).

The booth featured sample products which the visitors had an opportunity to taste as they got explanation about the various innovative products from mango fruit.
